Text 27 Jan Bacon Wrapped Jalapeno Poppers

15 fresh jalapenos

1/2 c cream cheese (softened)

3/4 extra sharp cheddar

1/2 tsp garlic salt

1/2 tsp paprika 

Few dashes Worcestershire sauce

Salt & Pepper to taste

15 strips bacon partially cooked (it won’t crisp up quite enough if not partially cooked, I just microwaved the strips for 2-3 minutes so they were still soft)

Preheat oven to 350 degrees F.

Slice jalapenos as close to the stem as possible. Then lengthwise in half. Using a spoon, remove the seeds and veins moving it towards the Bottom of the pepper. This will leave the top close to where the stem was in tact and create a boat-like pepper for filling.

In a bowl combine cheeses and spices. Make sure the cream cheese is soft enough to stir or everything will be hard to incorporate together. 

Spoon the cheese mixture in to the jalapenos, but do not overfill because it will just melt out. Wrap each jalapeno with a strip of bacon and place in rows on a cookie sheet covered in tinfoil.

(If you have extra filling, it’s awesome if you form it into a ball and chill in the fridge to be served with crackers, pretzels, or veggies.)

Bake at 350 for 17-20 minutes. 

Let cool a few minutes and serve. Personally, I don’t miss the breading or fried aspect of traditional poppers with these, and they don’t even need a dipping sauce. If you do prefer a sauce, I would recommend ranch. It compliments the spices without overwhelming the taste of the poppers themselves.
